Turkish köfte — step-by-step recipe
Serves 4, ±40 minutes (plus resting).
Ingredients
- 500 g halal ground beef (or half beef, half lamb)
- 1 onion, finely grated
- 2 cloves garlic, pressed
- 1 slice stale bread, soaked (or 2 tbsp breadcrumbs)
- 1 egg
- 1 tsp cumin, 1 tsp paprika, salt and pepper
- handful of chopped parsley
Method
- Mix the meat with onion, garlic, soaked bread, egg, spices and parsley; knead 5 minutes.
- Rest: cover and refrigerate 30 minutes.
- Shape oval köfte of about 4 cm.
- Grill or fry 3–4 minutes per side until golden.
- Serve with pilav, yoghurt and salad.
