Turkish köfte and kebab — Yasemin

The role of meat in Turkish cuisine

Meat — especially beef and lamb — is rarely just a piece of meat in Turkish cooking. It's spiced with cumin, paprika and garlic, slow-cooked in güveç (clay pot), grilled as kebab or minced into köfte. Almost always served with pilav or bread and a spoon of yoghurt. At Yasemin all meat is halal and freshly prepared.

Turkish köfte — step-by-step recipe

Serves 4, ±40 minutes (plus resting).

Ingredients

  • 500 g halal ground beef (or half beef, half lamb)
  • 1 onion, finely grated
  • 2 cloves garlic, pressed
  • 1 slice stale bread, soaked (or 2 tbsp breadcrumbs)
  • 1 egg
  • 1 tsp cumin, 1 tsp paprika, salt and pepper
  • handful of chopped parsley

Method

  1. Mix the meat with onion, garlic, soaked bread, egg, spices and parsley; knead 5 minutes.
  2. Rest: cover and refrigerate 30 minutes.
  3. Shape oval köfte of about 4 cm.
  4. Grill or fry 3–4 minutes per side until golden.
  5. Serve with pilav, yoghurt and salad.
Tip: knead firmly and let it rest — that's the secret to köfte that won't fall apart on the grill.

Tips for perfect Turkish meat dishes

  • Season the night before for deeper flavour.
  • Not too lean: a little fat keeps köfte and kebab juicy.
  • Low and slow for stews like güveç and orman kebabı.
