Pirinç pilavı — step-by-step recipe
Serves 4, ready in ±30 minutes.
Ingredients
- 2 cups Turkish rice (or basmati), well rinsed
- ½ cup tel şehriye (orzo / fine vermicelli)
- 2 tablespoons butter (or olive oil for a vegan version)
- 3 cups hot water or (chicken) stock
- 1 teaspoon salt
Method
- Rinse the rice under cold water until clear and drain well.
- Toast the şehriye: melt the butter and toast the orzo over medium heat until golden.
- Add the rice and stir for 2 minutes so every grain is coated.
- Pour in the hot water or stock with the salt. Boil, cover, simmer on low 12–15 min until absorbed.
- Let it rest off the heat for 10 minutes, then fluff with a fork.
Tip: place a clean tea towel between pan and lid while resting — it absorbs steam and keeps the pilav extra fluffy.
